What I Eat In A Day

image6I spend far too much time in the bath, not because I love a relax or a good read of a book while soaking my pale, winters body. I get quickly addicted to you tube clips. The latest block were a string of people talking about what they ate in a day.

This was a mix of people with very different life styles and cultures.

I get asked by work friends -‘What do you eat???’

My response is usually – ‘Lots of things!’

My day job is not hard hitting on my body, so my intake of food is pretty small….sometimes nothing till around 10 am, once I’m settled into work. My company supplies us with free fruit so I am in my element of fresh fruit we get delivered from a local fruit and veg stall. I consume between 3-4 fruits each morning.

No more than 2 coffee’s in the morning (with Hemp Milk because it is the best…..I will do a milk blog soon…its coming!) as I tend to live by a very true quote -‘First I drink the coffee, then I do the things’

2pm- Lunch time.

I will generally bring a home made lunch to work, something I can prep easily in the kitchen or pop in the microwave. So for example I’d made a pea and mint soup with cardamoms- a dollop of hummus and a dust of paprika for lunch yesterday. Warm, delicious, filling and totally satisfying.

I can however feel the wintry season gloom towards me and all I wish for lunch is a big bowl of porridge with brown sugar or agave nectar. Warming and wholesome

I make mine with oats, hemp milk and a pinch of sea salt.

7pm -Dinner time.

This can be my favourite meal of the day or its the laziest. I tend to alternate making a batch of chilli, curry, stew, soup….enough for 3 servings, so I can take some to work but also I can reheat when I get home from a busy day at work/gym.

I know for a fact that I don’t drink enough water during the winter months, I think its something we are all prone to. Even the tube tannoy speakers will remind us to carry water with us during hot seasons, but you must remind yourself that water isn’t just for the summer. Invest in the January sales and buy yourself a lovely water jug you can keep on your desk or a glass water bottle.

I love to take requests on dishes which you might want to veg-anise, these are my favourite challenges of all- so please do get in touch. I could be that a family member is coming home for the festive holidays and you want to cook them something special. Or you just fancy cutting out animal and animal produce before doing Veganuary.

Keep doing the best you can do.

No animal needs to be a prisoner, suffer and be slaughtered, just for a meal.
